Chicken Sausage, Butternut Squash, and Brussel Sprout Foil Packets

Raise your hand if you’ve never made dinner in a foil packet? ✋I’m not sure why? I just have never ventured down that road before. However, the other week, my best friend was raving about this recipe so I decided to jump on board and it’s SO GOOD? Not only is it insanely simple (especially if you get the pre-cut butternut squash from Trader Joe’s), but the chicken sausage is tasty as all fuck. I cooked them all at once and reheated them throughout the week for dinner, and it worked out perfectly. Oh, I also added rice to each meal because it needed some carb love.

INGREDIENTS:

  • 4 links (12 oz) cooked Chicken Sausage, sliced 3/4-inch (usually in the hot dog section)

  • 3/4 teaspoon kosher salt

  • 2 tablespoons extra virgin olive oil

  • 16 ounces Brussels sprouts, halved

  • 12 ounces butternut squash (or 1 packet of the stuff from Trader Joe’s)

  • 4 sprigs fresh thyme (I used dried thyme!)

  • fresh black pepper, to taste

DIRECTIONS:

  • Preheat oven to 425°F.

  • In a large bowl combine the sausage, brussels sprouts, butternut, thyme, olive oil, 3/4 teaspoon salt and pepper.

  • Make foil packets:

    • Tear off an 18” sheet of foil.

    • Center the food on the foil sheet.

    • Bring up the long sides of the foil, so the ends meet over the food.

    • Double fold the ends, leaving room for heat to circulate inside.

    • Double fold the two short ends to seal the packet.

  • Divide the sausage and vegetables, about 2 cups each between 4 foil packets.

  • Bring up the long sides of the foil, so the ends meet over the food.

  • Bake 25 minutes, or until the vegetables are tender.
