Easy Turkey Burgers with Cheesy Cauliflower Rice Tots

The burgers really are that easy and surprisingly flavorful for how simple they are. The tots, however, are not that easy. They could’ve been, but maybe I didn’t let the cauliflower rice cool as long as I should’ve or press the water out of it completely as instructed. They were a bit tricky to form — they were resistant. But I somehow ended up with about 24 tots, so I guess I didn’t fail too hard.

Anyway, let the rice cool and get that fucking water out of there. Also, I did an organic ketchup + siracha dipping sauce and it was SO GOOD.


Easy Turkey Burgers and Cheesy Cauliflower Tots from Anna Vocino’s cookbook Eat Happy

FOR THE BURGERS (makes 4 patties):

1 pound ground turkey

2 TBSP low sodium soy sauce

1/4 cup organic ketchup

1/2 tsp onion powder

1/2 tsp garlic powder

1 egg

1 TBSP avocado oil

Optional: large butter lettuce leaves, tomato slices, cheese slices, avocado, or whatever toppings you desire


4 cups cauliflower rice

2 TBSP avocado oil

1/4 cup minced onion

2 TBSP minced red pepper

2 TSP minced jalapeño pepper

2 TSP cilantro, finely chopped

1/4 cup almond flour

3/4 cup shredded cheddar jack cheese

1 TSP salt

1/2 TSP ground pepper

1 egg


For turkey burgers: In a large mixing bowl, combine ground turkey, soy sauce, ketchup, both powders, and egg. Form into patties with an indentation in the middle to prevent the burgers from getting too puffy. Heat avocado oil in a non stick pan to medium high heat, cook burger patties about 5-8 minutes per side until cooked through. Wrap in large butter lettuce leaves, serve with desired toppings.

For tots: Steam cauliflower rice for 10 minutes. Pour onto a clean, dry towel, and press all excess water out. Once slightly cooled, press one more time for good measure.

Preheat oven to 400º. Prepare a baking sheet with non-stick foil drizzled with avocado oil. In a large bowl, mix the cauli, onion, red pepper, jalapeño, cilantro, almond flour, cheese, salt, and pepper until evenly blended. Add egg and mix thoroughly.

Form into tot shaped balls. Lay on baking sheet, about 1/2-inch apart. Bake in oven for 20 minutes. Remove from oven, gently flip the tots, and continue baking for 20 more minutes until crispy and golden brown.
