Low Calorie Banana Cinnamon Muffins

FUCK. ME. UP. FAM. I’ve made it this far into quarantine without succumbing to the desperate act of making banana bread, but today was the day. I Googled “cinnamon banana bread” because if it doesn’t involve a wild amount of cinnamon, I’m out. I found some at first that seemed intriguing enough, but then it hit me: Bitch, make muffins. So, I refined my Google search for just that and found this low calorie banana cinnamon muffin situation, and OMG — THEY ARE PERFECT. And only 138 calories each! And easy. So, make them. Now.

Low Calorie Banana Cinnamon Muffins by Tastes Better From Scratch

Makes 12 muffins

INGREDIENTS:

  • 4 bananas mashed

  • 1 large egg

  • 1 Tablespoon vanilla extract

  • 3 Tablespoons light brown sugar

  • 2 Tablespoons granulated sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups all-purpose flour (white or whole wheat)

  • 2 Tablespoons unsalted butter, melted

DIRECTIONS:

  • Grease a standard muffin pan (or line with paper muffin liners). Preheat oven to 350º.

  • Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.

  • In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture and stir, just to combine.

  • Gently stir in melted butter. Don't over-mix the batter.

  • Spoon the batter into prepared muffin pan and bake for 18-25 minutes, but check them at 19 minutes so you don’t over bake! Mine were perfect at 19 minutes.
