The Fluffiest Cottage Cheese Scrambled Eggs

If you’re looking for an extra boost of protein, flavor, and fluff in your morning eggs, you’ve come to the right place. Blending these ingredients together makes these scrambled eggs the absolute fluffiest you can make at home, AND are packed with protein for a healthy start to the day!

Ingredients

  • 3 large eggs (or 2 large eggs + 1 large egg white OR all egg whites. Doesn’t matter!)

  • 2 TBSP whole fat cottage cheese (Good Culture is where it’s at)

  • A small sprinkle of the following: Paprika, Onion Powder, Kosher salt, Ground black pepper

  • 1/2 TBSP butter (I use Land of Lakes Whipped Butter)

INSTRUCTIONS

Place all ingredients (except for the butter) into a small blender/food processor (this one is perfect). Process together until well combined. You’ll have a beautiful white-yellow foamy liquid. Heat the butter in a skillet over medium heat. Once melted, pour mixture into skillet and turn the eat up to medium-high heat. Standby with a spatula to help move the mixture around while it cooks. It will seem very foamy, but I promise it will eventually turn into insanely fluffy scrambled eggs and the foam will go away!

Once eggs are just about done, kill the heat. Eat alone or with a piece of toast, on a biscuit, in a tortilla—whatever tickles your fancy!
