3-Ingredient Banana Pancakes

I’ve had a very odd fixation with pancakes lately. I don’t know what it is or where it came from, but I’ve been googling the crap out of easy, healthy-ish pancakes to eat as a protein-heavy breakfast option. I found these 3-ingredient banana pancakes and, although it sounded impossible, I trusted the recipe right away because I give everything and everyone the benefit of the doubt when I can. Spoiler alert: They turned out GREAT. To bulk up the protein even more, I added two scoops of my Vital Proteins Collagen Peptides to the mix, and the consistency was still gorgeous. I simply topped them with maple syrup and had a fantastic brunch.

The Tasty recipe says it serves four, but uh, I ate it all and it was just enough.

3-Ingredient Banana Pancakes

INGREDIENTS

1 banana

2 eggs

1/4 tsp ground cinnamon

OPTIONAL: 2 scoops of Vital Proteins Collagen Peptides (for added protein)

INSTRUCTIONS

Mashed banana in a bowl. Add eggs, cinnamon, and peptides (if using) to bowl. Whisk together to create a batter.

Set a non-stick skillet over medium heat. Using 1/4 cup, cook one pancake at a time until batter is used up.

Top with berries, syrup, peanut butter—whatever your stomach desires. Enjoy!
